Após dois anos à frente desse projeto, percebi que meu verdadeiro lugar é no campo, e não no meio gastronómico. Acredito que já existem muitos chefs talentosos e restaurantes incríveis no mundo, mas faltam agricultores comprometidos com práticas regenerativas. Precisamos, com urgência, repensar a maneira como produzimos, distribuímos e consumimos alimentos. Nos vemos do outro lado.

While there are already so many talented chefs and amazing restaurants out there, there aren't enough farmers dedicated to regenerative practices.
